  1. Peel and finely chop the onion. Wash, shake dry and finely chop the mint. Wash the chillies, halve them lengthways, remove the stem ends, membranes and seeds, then chop the flesh. Crumble the toast. Soak the skewers in water.
  2. Put all the ingredients, apart from the ghee, egg and lime juice, into a large bowl, season with 1 tsp salt and knead to combine.
  3. Whisk the egg and mix it into the lamb mixture. Melt the ghee. Line a baking tray with baking paper. Divide the dough into four and roll out each piece to make a long sausage, wrap them around the skewers. Spread evenly with your hands, brush with ghee.
  4. Preheat the oven to 240°C. Place the skewers onto the baking tray and bake in the oven (centre) for 15 minutes, turning them once, after half the cooking time. Drizzle with lime juice and serve. The kebabs taste delicious with tandoori vegetables or naans.

We wish you a lot of fun making them!
