Berry bowl with pumpernickel granola

Enjoy summer with a delicious bowl made from a variety of different berries! Plus, a popular German bread variety as a special highlight.

Recipe idea: Berry Bowl with Pumpernickel GranolaFor this you will need the following ingredients:

2 slices pumpernickel, 8 tbsp coconut chips, 4 tsp maple syrup, 4 large bananas, 500 g blueberries, 100 g raspberries, 400 ml coconut-almond-drink, 4 tbsp açai powder (optional)

  1. Crumble pumpernickel into small pieces and toast in a frying pan without fat on medium to high heat for 5–8 min., stirring occasionally, until dry. Reduce the heat, add coconut chips, and continue roasting until lightly browned. Pour in the maple syrup and mix everything thoroughly. Let the pumpernickel granola cool down.
  2. Peel bananas, cut 2 into rough pieces and the rest into thin slices. Rinse blueberries and raspberries separately and drain well. Place the rough banana pieces with 200 g blueberries, the coconut-almond drink, and açai powder, if desired, into a tall mixing container. Blend everything into a thick, pudding-like smoothie.
  3. Distribute the smoothie evenly into the glasses. Arrange banana slices, remaining blueberries, and raspberries on top. Seal the glasses, place in the refrigerator, and let stand at room temperature for approx. 1 hour before serving. Sprinkle the granola over the berry bowl and spoon everything directly out of the glass.
