  1. Allow prawns to thaw for 1 hour. Bring sushi rice with 300 ml water to a boil, cook uncovered for 2 min., then let it swell covered on the switched-off hotplate for 20 min. Wash and trim radishes, cut into thin slices and briefly marinate with 1 tbsp vinegar, 2 tsp sugar, oil and a pinch of salt. Trim and wash bell pepper, cut into thin strips. In a pan, gently steam the prawns over low heat for 4 min. Season with salt and ½ tbsp lime juice. Mix wasabi, remaining lime juice, 2 tsp sugar, and mayonnaise. Wash lettuce and spin dry.
  2. Warm the rest of the vinegar and sugar as well as ½ tsp salt in a pot. Stir until salt and sugar dissolve. Spread the rice onto a large plate, drizzle with the vinegar mixture, and let it cool.
  3. Place nori sheets on 2 plates with the rough side facing up. Spread rice on top, leaving a 1 cm margin free at the top. In the centre, arrange radishes, mayonnaise, prawns, bell pepper, and lettuce in a line. Roll up the nori sheets, brush the free edges with radish marinade and press lightly.

Enjoy your meal!
