Garlic Naan

Vegetarian lifestyles characterize a part of India's diverse food culture. Thus, this bread originating from India is a popular accompaniment to warm dishes.

Recipe idea: Garlic NaanFor this you will need the following ingredients:

400 g wheat flour (type 550), 1 tsp dry yeast, ½ tsp sugar, 1 tsp salt, 120 ml milk, 3 tbsp ghee (Indian clarified butter; alternatively oil), 100 g room-temperature yogurt (3.5% fat), 5 sprigs cilantro, 2 garlic cloves, additional flour for working

Preparation

  1. Mix flour, yeast, sugar and salt in a bowl. Warm milk with 2 tbsp Ghee until lukewarm. Add it along with yoghurt to the flour mixture and knead everything into a smooth dough for 5–10 min. Cover dough and let rise in a warm place for approx. 1 hr.
  2. For the spice mix, rinse coriander greens, shake dry and chop including fine stems. Peel and chop garlic. Melt 1 tbsp Ghee in a saucepan, sauté garlic in it for approx. 1 min. Remove from heat. Stir in the coriander.
  3. Divide dough into eight portions and roll out on a lightly floured surface into flatbreads approx. 18 × 12 cm. Cook the flatbreads individually in a hot pan without fat for about 3 min. until bubbles form. Turn over, press down with a spatula, and cook for another approx. 3 min. Then remove, brush the upper side with spice mix and keep the breads warm in a clean kitchen towel.
