Recipe idea: Chicken curry with riceFor this, you will need the following ingredients:

200 g chicken breast fillet, 125 g basmati rice, 1 small onion, 1 garlic clove, 1 small piece ginger (approx. 1 cm), 1/2 red bell pepper, 1/2 zucchini, 1 tbsp oil, 1 tbsp curry powder, 1/2 tsp turmeric, 200 ml coconut milk, 100 ml vegetable broth, salt, pepper, 1/2 tbsp soy sauce, fresh coriander (optional)

  1. Cook rice: Cook basmati rice according to package instructions in lightly salted water.
  2. Prepare chicken: Cut chicken breast into bite-sized pieces, season with salt and pepper.
  3. Cut vegetables: Finely chop onion, garlic and ginger. Dice bell pepper and zucchini.
  4. Sear chicken: Heat oil in a pan and fry chicken pieces until golden brown. Remove and set aside.
  5. Sauté vegetables: In the same oil, fry onion, garlic and ginger. Add bell pepper and zucchini and briefly sauté.
  6. Season: Add curry powder and turmeric, briefly toast until fragrant.
  7. Prepare sauce: Add coconut milk and vegetable broth, stir and bring to a boil.
  8. Add chicken: Place browned chicken into the sauce and let simmer for about 10 minutes until cooked through.

Season to taste: Adjust seasoning with soy sauce, salt and pepper.

Serve: Arrange curry with rice and optionally garnish with fresh coriander.
