Lemon-Poppyseed-Scones

Scones are an essential component of English Afternoon Tea. And from now on also an integral part of your recipes!

Recipe idea: Lemon Poppy Seed SconesYou will need the following ingredients for this:

½ organic lemon, 120 g yogurt, 2 tbsp coconut blossom sugar, 4 tbsp rice syrup, 1 pinch ground vanilla, 100 g whole-grain spelt flour (alternatively whole-grain kamut flour), 80 g whole-grain rice flour (alternatively whole-grain spelt flour), ½ tsp baking soda, salt, 2 tbsp poppy seeds, 2 tbsp butter

  1. Preheat the oven to 175 °C. Line a baking tray with baking paper. Wash and dry the lemon thoroughly, finely grate the zest and squeeze out the juice. Mix both with yoghurt, coconut blossom sugar, rice syrup and vanilla.
  2. Mix both types of flour with baking soda, 1 pinch of salt and poppy seeds in a bowl. Cut the butter into small pieces and add. Also add the yoghurt mixture. Knead everything with the dough hook attachments of the hand mixer.
  3. Form the dough into a ball, place on the tray and press into a circle about 1 cm thick. Dip a sharp knife into water and cut the dough circle into 8 wedges. Put the tray into the oven (middle shelf) and bake the scones for 10 min. until golden brown. Then remove and let cool.
