50 g peeled almonds, 3 tbsp pistachio kernels, 100 g butter, 200 g angel hair pastry strands (Kadayif; Turkish grocery store), 250 g mozzarella, 1 tsp cinnamon powder, 85 g sugar, 2 tbsp rose water (oriental grocery store), In addition baking dish (20 × 30 cm)

  1. Preheat oven to 250 °C. Meanwhile, chop almonds and pistachio kernels separately. Melt the butter in a pan. Pull apart the Kadayif pastry threads and toss in the melted butter. Spread half of the pastry threads in the baking dish. Coarsely grate mozzarella, spread it over the threads and cover with the remaining pastry threads. Sprinkle the chopped almonds and cinnamon on top.
  2. Place the dish onto the oven rack (middle position), reduce temperature to 200 °C and bake the pastry threads approx. 30 min. Meanwhile, bring sugar and rose water to a boil with 200 ml water in a small saucepan. Continue to simmer the mixture while stirring until the sugar dissolves and the syrup is very hot.
  3. After baking time, remove the dish from the oven and drizzle the hot sugar syrup over the pastry. Sprinkle with the pistachios and enjoy the dessert hot.
