Hawaiian Poke Bowls

Recipe idea: Hawaiian Poke BowlsFor this you need the following ingredients:
240 g sushi rice, 8 spring onions, 8 tbsp soy sauce (tamari; without sugar), 4 tbsp sesame oil, salt, 4 salmon fillets (approx. 100 g; sushi quality, skinless), 2 avocados, 4 tbsp lemon juice, 4 tbsp black sesame, 4 tbsp white sesame, 4 tbsp alfalfa sprouts, 4 tbsp radish sprouts

- Cook the sushi rice in 600 ml water for about 20 mins. until cooked and the water has been absorbed. Remove the pot from the heat and allow the rice to cool. Meanwhile, clean and wash the spring onions and slice them into thin rings. In a bowl, mix the soy sauce with the sesame oil and spring onions. Season with salt.
- Pat dry the salmon, cut into approx. 1½ cm cubes and mix with the marinade until evenly coated. Let the salmon marinate covered for about 30 mins. Remove avocado flesh from the skins with a spoon, cut into cubes and mix with the lemon juice.
- Roast both sesame types in a pan over medium heat until fragrant. Rinse and drain the sprouts thoroughly in a sieve. Divide the sushi rice among four bowls. Top with the marinated salmon, avocado cubes and sprouts. Sprinkle the Poké Bowls with sesame seeds and enjoy.
