Sweet Potato Gratin

Recipe Idea: Baked Sweet PotatoesYou will need the following ingredients for this:
2 equally sized and uniformly shaped sweet potatoes (approx. 250 g each), 4 stems parsley, 4 stems basil, 100 g cream cheese (full fat), 60 g grated Emmental cheese, 50 g small lean ham cubes, salt, pepper, also aluminium foil, oil for the foil, ovenproof dish

- Preheat the oven to 200 °C. Wash the sweet potatoes, scrub thoroughly, and pierce several times all over with a fork. Lay out 2 sheets of aluminum foil and brush with a little oil. Place the potatoes on them and wrap in foil. Bake in the oven (middle) for approx. 35 mins., they should not become completely soft.
- Wash the parsley and basil, shake dry and chop. Mix both with the cream cheese, Emmental and ham cubes, and season the mixture with salt and pepper.
- Remove the sweet potatoes from the oven, carefully unwrap and cut in half lengthwise. Scoop out part of the flesh from the skins with a spoon or melon baller, and roughly chop. Add this to the cream cheese mixture and mix thoroughly. Fill the hollowed potato halves with this mixture. Place the sweet potatoes in an ovenproof dish and bake in the oven (middle) for 10–15 mins. until golden brown. Remove, place one stuffed potato half on each plate, and serve.
