Spicy Falafel

Recipe idea: Spicy FalafelFor this, you will need the following ingredients:
250 g dried peas (green or yellow; alternatively dried broad beans or dried chickpeas), 2 onions, 2 garlic cloves, ½ bunch parsley, ½ bunch fresh coriander, 1 tsp ground coriander, 1 tsp ground cumin, 1 tsp sweet paprika powder, salt, 1 tsp baking soda (alternatively baking powder), 750 ml oil for frying

- Place legumes into a bowl and cover with water to soak overnight.
- The next day, peel and coarsely chop the onions and garlic. Rinse the herbs, shake them dry, and pluck off the leaves. Drain the peas in a sieve and place them into the food processor. Add onions, garlic, and herbs and chop everything as finely as possible.
- Mix spices and 2 tsp salt with baking soda or baking powder and add to the falafel mixture. Mix thoroughly and form approx. 40 balls. They cannot really be rolled; rather, press the mixture into shape between your hands.
- Heat oil well in a wide pot. The oil is hot enough when small bubbles immediately form on the handle of a wooden cooking spoon. Fry the balls in batches for 4–5 mins until golden brown. Remove with a slotted spoon and drain on kitchen paper.
