Apple-Quark Blini with Sea Buckthorn Cream

Blinis can traditionally be eaten for breakfast, as a starter or as dessert, and with the sea buckthorn cream, it becomes a real taste experience no matter the time.

Recipe idea: Apple-Quark Blini with Sea-buckthorn CreamFor this, you will need the following ingredients:

6 eggs, 4 tbsp sugar, 800 g low-fat quark, 300 ml low-fat milk, 200 g wheat flour (type 1050), 4 apples, 2 tbsp oil, 4 tbsp sea buckthorn fruit spread, 4 tbsp almond sticks

  1. Whisk the eggs with sugar and 4 tbsp hot water until frothy. First stir in half of the quark and the milk, then add the flour.
  2. Peel the apples, cut into quarters and remove the cores. Slice the apple quarters into wedges. Heat approx. 1 tsp oil in a non-stick pan. For each blini, place approx. 2 tbsp batter into the pan and add 2 or 3 apple slices on top. Cook the pancakes until golden brown on both sides. Continue until all batter is used up.
  3. Meanwhile, thoroughly whisk the remaining quark with the sea buckthorn fruit spread. Toast the almond slivers in a pan until golden brown. Serve the quark with the blinis and sprinkle the almonds over the top.
