Pumpkin Pasta

Recipe idea: Pumpkin PastaYou will need the following ingredients for this:
400 g ribbon pasta of your choice, 1 small Hokkaido pumpkin, 1 medium light onion (diced), 2 cloves garlic (diced), 50 g butter (alternatively oil),
200 ml milk, 200 ml cream, 200 g crème fraîche, 2 tbsp tomato paste, 1 tsp paprika powder, 1 tsp sugar, 2 sprigs thyme, 500 ml vegetable broth, 1 pinch nutmeg, pepper and salt, roasted pine nuts and pumpkin seeds, Parmesan (or alternative cheese)

- Peel the pumpkin, remove the seeds and dice it.
- In a large pan, sauté the diced onions in butter over medium heat.
- Add garlic and pumpkin cubes and lightly brown for 5 minutes. Please be careful that the butter becomes golden at most and nothing burns; reduce heat if necessary.
- Deglaze with broth, add tomato paste, sugar and paprika powder and season with salt and pepper.
- Add thyme sprigs and simmer the pumpkin, covered, over low heat for 20-25 minutes until tender.
- In the meantime, cook the ribbon pasta and toast the seeds.
- Remove thyme sprig, then puree the sauce.
Season with nutmeg and finalize seasoning to taste.
