Green asparagus becomes a crispy highlight! Our recipe for fried asparagus with a refreshing yoghurt dip combines crunchy asparagus with a golden-brown breading and a creamy dip. Perfect as an appetizer, snack or side dish – a delight for all gourmets.

Recipe idea: Green asparagusYou will need the following ingredients for this:

500 g green asparagus, 100 g flour, 2 eggs, 100 g breadcrumbs (optionally mixed with Parmesan), salt, pepper, oil for frying, For the yoghurt dip: 200 g Greek yoghurt, 1 garlic clove, finely chopped, 1 tbsp lemon juice, 1 tbsp olive oil salt, pepper, fresh herbs (e.g. dill, parsley or chives), finely chopped

Preparation

  • Wash asparagus, trim off the woody ends.
  • Place flour, beaten eggs and breadcrumbs into separate bowls.
  • Season asparagus spears with salt and pepper, then coat them in flour, dip into the eggs and finally roll in breadcrumbs.
  • Heat oil in a pot or pan to approx. 170 °C and deep-fry the asparagus in batches until golden brown. Let it drain on kitchen paper.
  • For the dip, mix yogurt with garlic, lemon juice, olive oil, salt, pepper and herbs.
  • Serve asparagus hot with the yogurt dip.
