Ingredients (for 4 servings):
250 g brown lentils, 2 carrots, 2 potatoes, 1 onion, 1 stick leek, 1 piece celery (approx. 100 g), 1 tbsp butter or oil, 1.5 liters vegetable stock, 2 bay leaves, 2 tbsp vinegar, salt, pepper, a pinch of sugar, 4 sausages (e.g. Wiener or Bockwürste), 1 tsp mustard (optional), parsley for garnish
Preparation
Rinse lentils in a sieve.
Peel or clean vegetables and cut into small cubes or rings.
Heat butter or oil in a large pot, sauté onion until translucent, then briefly sauté carrots, leeks, celery, and potatoes.
Add lentils, pour in vegetable broth, add bay leaves and let simmer for approx. 30 minutes until lentils and vegetables are tender.
Season to taste with vinegar, salt, pepper, and a pinch of sugar. Stir in mustard if desired.
Cut sausages into slices, add to the stew and briefly heat.
Sprinkle with parsley and serve.
