Recipe idea: Lentil stewYou'll need the following ingredients:

Ingredients (for 4 servings): 250 g brown lentils, 2 carrots, 2 potatoes, 1 onion, 1 stick leek, 1 piece celery (approx. 100 g), 1 tbsp butter or oil, 1.5 liters vegetable stock, 2 bay leaves, 2 tbsp vinegar, salt, pepper, a pinch of sugar, 4 sausages (e.g. Wiener or Bockwürste), 1 tsp mustard (optional), parsley for garnish

Preparation

 

  • Rinse lentils in a sieve.
  • Peel or clean vegetables and cut into small cubes or rings.
  • Heat butter or oil in a large pot, sauté onion until translucent, then briefly sauté carrots, leeks, celery, and potatoes.
  • Add lentils, pour in vegetable broth, add bay leaves and let simmer for approx. 30 minutes until lentils and vegetables are tender.
  • Season to taste with vinegar, salt, pepper, and a pinch of sugar. Stir in mustard if desired.
  • Cut sausages into slices, add to the stew and briefly heat.
  • Sprinkle with parsley and serve.
