Pork fillet in bean sauce

Recipe idea: Pork fillet in bean sauceYou will need the following ingredients for this:
1 can baby corn (in water, not marinade; 280 g drained weight), 1 thin leek stalk, 500 g pork tenderloin, 2 tbsp oil, 3 tbsp light soy sauce, 3 tbsp black bean paste (Asian store), 1 tsp cornstarch, salt, pepper

- Drain the baby corn cobs and halve crosswise. Trim the leek, cut it lengthwise in half, wash thoroughly, shake dry and cut into thin slices. Rinse the pork tenderloin, pat dry and cut into ½ cm thick slices.
- Heat the oil in a wok, sear the pork slices in batches for approx. 15 sec. on each side. Move cooked slices to the side, continue searing remaining slices in center of wok. When all slices are browned, add the corn and leek to the wok and stir-fry at high heat for 1 min.
- Whisk together soy sauce, bean paste, 5 tbsp cold water and cornstarch until thoroughly combined, pour into wok and cook for another 1 min., stirring continuously. Season the dish with salt and pepper, and serve immediately if possible.
