Asparagus Risotto Recipe
Did you know that risotto traditionally comes from northern Italy and is prepared in many different variations today? Would you like to bring a little Italian holiday feeling into your kitchen? Then why not try our unusual risotto recipe with green asparagus?
Peel the ends of the asparagus and cut into approx. 2 cm pieces. Then boil the asparagus in salted water until it is "firm to the bite" and rinse under cold water. Keep the asparagus stock! Cut the onions into small cubes and fry briefly in a pot with olive oil. Add the risotto rice, fry briefly and then add the asparagus stock. Cook the risotto rice until it is al dente. Add the white wine in small portions while cooking. Do not forget to stir in between. Once the rice is cooked, fold in the asparagus, butter and Parmesan and season with salt and pepper.
