Basque Pintxos

The Pintxos are an essential part of the local culinary culture of the Basque people but also perfectly suited as finger food here.

Recipe idea: Basque PintxosFor this you will need the following ingredients:

200 g frozen prawns (peeled, ready-to-cook; with MSC label), 4 tbsp lime juice, 2 tsp honey, 3 tbsp olive oil, ½ tsp cayenne pepper, ½ tsp ground cumin, salt, pepper, 1 red onion, 2 garlic cloves, 150 g cherry tomatoes, 1 avocado, ½ baguette, additionally 12 small wooden skewers

  1. Rinse the prawns with cold water, drain and set aside until partially thawed. Mix lime juice, honey and 2 tbsp oil with a little cayenne pepper and cumin. Season with salt and pepper. Peel the onion, cut into strips and marinate for approx. 10 min.
  2. Peel garlic and cut into slices. Heat 1 tbsp oil in a pan. Fry the prawns for approx. 4 min. until browned and just cooked through, adding garlic halfway through cooking.
  3. Wash and halve the tomatoes. Halve and remove the pit from the avocado. Peel the halves, cut lengthwise once more and then slice crosswise. Mix tomatoes and avocado with the marinated onions. Season again with salt, pepper and cayenne pepper to taste.
  4. Cut the baguette into 12 slices. Spread the avocado-tomato salsa onto them. Top the salsa with the garlic prawns and secure with wooden skewers.
